Bhapa Doi is a Bengali sweet dish, a kind of yoghurt sweet made from yoghurt, condensed milk and green cardamom, which is steamed. It is smooth, has the texture of a custard and about the sweetness of a normal sweetened milk. Served often topped with saffron or nuts this sweet dish Really helps to cool your palate after a heavy feast during Durga Puja. This is a very basic Rashogolla recipe but has the true flavours of Bengali mishti or Bengali sweets as I call them.
Mishti Pulao (Sweet Rice)
It would be remiss of me to not include Mishti Pulao in a list of Bengali festive recipes, a sweet fragrant rice preparation using gobindobhog rice, ghee, raisins, cashews and a pinch of saffron. The inherent sweetness in this pulao makes it to go well with other spicy foods like Kosha Mangsho and thus deploys the idea of yin and yang. The bright yellow color with its distinct aroma makes it a centre piece on the dining table during Durga Puja.
